Torrijas (Bread Pudding)

Torrijas are similar to French toasts, but the bread slices are soaked in milk, coated with egg and then fried. Because of that, torrijas are soft on the inside and crispy on the outside. Sprinkled with cinnamon and sugar, every bit is sweet and full of flavor. Apart from being really easy to prepare, the recipe is perfect to use up stale bread!

Ingredients

  • 750 g/1 lb 10 oz stale bread
  • 1 l/4 cups milk
  • 100 g/3.5 oz sugar
  • 1 cinnamon stick
  • Vegetable oil, for frying
  • 1 egg, beaten
  • Sugar and cinnamon, to sprinkle
  • Honey, to sprinkle (optional)

Instructions

  1. Cut the bread in 1-inch slices.
  2. Pour the milk in a small saucepan and heat. Add the cinnamon stick and the sugar. Let the sugar melt, then remove the saucepan from the stove and allow cooling.
  3. When cool, transfer the milk into a bowl. Dip the bread slices into the milk. Don’t soak the bread slices too much; otherwise, they will crumble when you lift them out of the bowl.
  4. Pour enough oil into a large frying pan to cover the bottom and heat on medium.
  5. Beat the egg and dip the bread slices until well coated. Carefully lift the bread out of the mixture and let the excess milk drain before placing the bread in the frying pan.
  6. When the oil is hot, add the bread slices. As the bread slices turn golden, turn them over. Fry until golden brown and crispy on the outside.
  7. Remove each slice from the frying pan and place on kitchen paper to drain.
  8. Sprinkle the top with sugar and cinnamon and serve hot in a serving plate. If you prefer, you can pour honey over them.
